Asparagus are one of those side dishes that never really excite me. I have not too seen too much diversity is how they can be prepared to make them more of a statement side dish in the past. But this Baked Asparagus Fries recipe is quite an exciting alternative to regular ole steamed or grilled asparagus. I can hear the crunch just by looking at these photos.
INGREDIENTS
For the aioli
1 head garlic
Olive oil
3/4 cup homemade or store-bought mayonnaise
2 Tablespoons fresh lemon juice

1 pound asparagus, cleaned and bottom ends trimmed
3 large egg whites
1 1/2 Tablespoons mayonnaise
2 cups Panko breadcrumbs, lightly crushed
2 Tablespoons chopped flat-leaf parsley
1/2 cup shredded Parmesan cheese
